When asked why he enjoys cooking up lunch in downtown Suffolk, David Waechter is pretty frank. The 25-year-old North Suffolk resident is originally from Long Island, N.Y., and has spent years in customer service both in and out of the restaurant industry.

Waechter said it was frustrating at times to not be able to provide certain services for customers because it wasn’t his decision to make. That’s why he wanted to go into business for himself. He moved to Suffolk to be closer to family and was doggedly determined to make his dream happen.

He said he had fond memories of going to school as a 19-year-old in Lower Manhattan. He would see food carts during lunch rush to and from classes, and it had always been a possibility for him ever since.

Then it became a reality in March when he started David’s Dogs & Catering.

“I always wanted to do it,” Waechter said. “I wasn’t able to make it happen for a while, but now I’ve finally got a place to start.”

David’s Dogs & Catering operates at two locations during the week. The cart currently operates outside of the Godwin Courts Building on North Main Street from 10 a.m. to 2 p.m. on Tuesday, and at the North Main Street Walmart from 11 a.m. to 3 p.m. Thursday and Saturday.

Waechter also has plans to eventually cater for Harbour View offices in North Suffolk.

“I can come and offer employees fresh entrees on their lunch hours without them having to leave the facility,” he said. “It’s really nice and convenient for them.”

The menu has the eponymous hotdogs, hamburgers and smoked sausage that come from Jeb’s Meat Market and Diner in Carrollton. Waechter is also looking to add barbecue sandwiches in the next few weeks.

“This menu has been expanding pretty rapidly. It’s just been great,” he said.

Customers can also get chips, snacks and drinks to go with their orders. The lemonade is especially popular downtown, as are the hotdogs themselves.

“The hotdogs are fantastic,” said Suffolk resident Dennis Jordan as he stopped for a bite outside the courthouse on Tuesday. “I actually had the two-hotdog special, and the lemonade is to die for. It’s homemade and fresh-squeezed. Just like grandma’s.”

The response that Waechter has gotten at these different locations and events in Suffolk so far this year has been encouraging, as has been the feedback on the David’s Dogs & Catering Facebook page.

“I got accepted for a bunch of events through the town of Suffolk this year,” he said. “That was awesome.”

Business is heating up for Waechter’s hotdog venture, and customers downtown are relishing the opportunity for an affordable and tasty lunch.

“I recommended everyone come and taste it for themselves,” Jordan said. “It’s like a taste of Suffolk, is what it is.”
